Pumpkin Cranberry Bread
I came across a recipe that's worth sharing. I found it this afternoon and it was ready for sampling by dinner time. A perfect, sweet and light festive bread: Pumpkin Cranberry Bread.
The list of ingredients are simple and the bread is ready in an hour. It's as easy as mixing your dry ingredients into the wet and baking. I opted for pumpkin pie spice instead of the cinnamon, cloves and nutmeg since I would only have to buy one package of spice instead of three. I used sweetened dried cranberries and pecans.
This was done for a bake sale, so I divided the batter among six mini-loaf foil pans. I still had enough left over to make six muffins for me to enjoy.
