wonton crisps

instead of making the "spicy" crisps, we wanted something sweeter for dessert. so, i layed out the wonton skins on a baking sheet and sprayed them with some butter flavored pam. then put a very tiny amount (maybe 1/4 teaspoon or less) of cinnamon-sugar in the center of 1/2 of the wraps. i folded those over to make a triangle and lightly pressed the seams together. on the other half, i put a small drop of low fat cream cheese (neufchatel) topped with a small sprinkle of cinnamon-sugar and folded them in the same way. i lightly sprayed the tops of all my triangles with pam and finished them with a sprinkle of cinnamon-sugar over the tops.

i followed the time and temperature as the recipe calls for, and they turned out just fine. overall, i liked the non cream cheese versions better. the wonton has a light texture, almost like a wafer. the sugar mixture adds the sweet taste i was after. (if you'd like them a little sweeter, when they come out of the oven, dust the wontons with some powdered sugar.) the whole process took no more than 15-20 minutes.

following is the original recipe.

sweet and spicy crisps
weight watchers

24 pieces wonton skin(s)
4 serving cooking spray, or enough to coat wonton skins
1 tablespoons sugar
1/4 teaspoon cayenne pepper
1/2 teaspoon ground cumin
1 teaspoon table salt

Preheat oven to 400°F. Arrange wonton skins on nonstick baking sheets in a single layer and coat with cooking spray.

Stir together sugar, pepper, cumin and salt; sprinkle mixture over wonton skins.

Bake until crisp, 8 to 9 minutes. Set on wire racks to cool completely.

Yield: 12 servings; 2 crisps per serving

grilled ham sandwich

this was ridiculously quick and easy to make! instead of using a pan and grilling this sandwich, i used the trusty george foreman grill. since the sandwich is pretty thick after you make it, i held the foreman grill down for a bit until the sandwich flattened out. i grilled each one for about 2 to 3 minutes -- long enough to warm the sandwich, crust up the bread and start to melt the cheese (i didn't want it runny).

the "dressing" is okay, if you like orange juice. it wasn't bad, per se, but i think i'll do a little less of the orange juice next time. i also added a small bit of mayonaisse to the mixture to try and thicken it up -- but, in the end it really wasn't necessary because the mixture was soaked up by the bread and didn't run like i thought it would.

a very filling sandwich -- overall, a tasty and cheap alternative to running out to quizno's for a toasted sub!

grilled ham sandwich
weight watchers

1 tablespoon white wine vinegar
1 tablespoon dijon mustard
1 tablespoon frozen orange juice concentrate
1/2 medium french baguette(s), cut into 5-inch pieces
3 oz extra lean deli-sliced ham, approximately 4% fat
1-1/2 oz low-fat hard cheese, monterey jack
1/2 serving sweet pickle(s), about 2 thin pieces sliced lengthwise
1 cup arugula, leaves

In a small bowl, whisk together all ingredients for dressing. Split each of the baguette pieces open crosswise. Pull out some of the soft center of bread.

Drizzle dressing onto both sides of baguette pieces. Layer ham, cheese and gherkin slices inside each sandwich, dividing ingredients evenly. Top each with arugula.

Coat a large, nonstick skillet with cooking spray and set over medium-low heat. Arrange sandwiches in skillet and cover with a lid that fits inside and can be pressed down onto sandwiches. Set something heavy on lid, such as a cast-iron skillet (turned over, if necessary, to keep it stable) to flatten sandwiches. Grill for 2 to 3 minutes, until bread is brown and crispy. Turn sandwiches and grill second side in same manner, until cheese has melted. Cut each sandwich in half. Serve immediately.
